2 cans (6 oz. each) crabmeat, drained and flaked, OR 2 cans (6 oz. each) tuna, drained and flaked. 1/2 cup chopped celery 1/2 cup chopped green onion 1/2 cup shredded carrots 1/2 cup finely chopped green pepper 1 package (6 oz.) Stuffing Mix. 1/3 cup Mayonnaise
Mix together stuffing mix with 3/4 cup water, mayonnaise, fish, vegetables. Cover and refrigerate 10 minutes. Heat a large nonstick skillet sprayed with cooking spray on medium heat. Shape 1/3 cupfuls of the stuffing mixture into patties; add to skillet in batches. Cook 3 minutes on each side or until golden brown on both sides, turning over carefully.
Suggestions for Fish Cakes:
You can also add 3 Tbsp Tartar sauce, or. 1 Tbsp lemon juice, or 1 cup Shredded Mozzarella Cheese.
If you like as well: One of the following ingredients can be added also: 2 Tbsp Sweet Pickle Relish, 1 cup Shredded CheddarCheese or 1/4 cup Barbeque Sauce.
Fish options for Fish Cakes: You can also use 3 cans (4 oz. each) tiny cooked shrimp, drained and flaked or 2 cans Salmon (6 oz. each) drained, skin, and bones discarded.
