These are a favourite here, but I haven't been able to buy sardines in the last few years.
Fried Sardines
12 sardines salt, pepper flour 1 egg 2 tablespoons milk 2 cups fresh breadcrumbs oil for frying lemon wedges
Herbed Butter
125g (4oz) butter 2 teaspoons chopped parsley 1 shallot 1 clove garlic salt, pepper
Herbed Butter - beat butter until smooth and creamy, add parsley, finely chopped shallot, crushed garlic, salt and pepper, beat well. Spoon half butter into a small bowl, refrigerate until firm. Reserve the remaining half for frying.
Scale fish with the back of knife, working from the tail toward the head. Cut away head, using scissors; cut underside of fish open. Clean fish inside.
Open sardines out flat. Cut backbone at tail end as shown.
Gently lever the backbone out, starting from the tail end. Wash fish and pay dry.
Coat sardines lightly in flour, seasoned with salt and pepper; dip in combined beaten egg and milk, coat well with breadcrumbs.
Heat oil and the reserved herbed butter in pan, cook sardines on both sides until golden brown and cooked through, approximately 2 minutes on each side. Serve with herbed butter and lemon wedges.
Serves 4 as an entree.
