Baked Rice Pudding 2/3 cup rice 600ml milk (low fat optional) 400ml water 1/3 cup sugar 1 teaspoon vanilla 1. Rinse rice. 2. Place rice and other ingredients in greased casserole dish. 3. Bake at 165°C (325°F) for 1 hour or until rice is cooked, stirring occasionally. Add extra milk or water, if necessary, to stop rice mixture becoming too dry. This recipe can also be cooked on the stove. Handy Hint: If you have leftover cooked rice, use it in this recipe, but don't add the water. From: www.health.qld.gov.au/brochure/young_heart.asp

Mmmm....I love rice pudding....for dessert, a snack, breakfast with fruit added...oh I could eat it any time of the day.
