Soak 125g vermicelli noodles in hot water for 10-15 minutes until soft. Drain. Cut into shorter lengths with scissors. Heat 1 tab vegetable oil in a wok over a high heat. Add 200g minced pork and stir-fry for 2 minutes. Add 1/2 thinly sliced small red onion, 1 crushed garlic clove, 1 tab lime juice, grated ginger and 1/2 deseeded, chopped red chilli, or from jar. Season and stir-fry for 1 minute. Add noodles, 1 tab water, 1 tab chopped coriander (optional) and stir-fry for 1 minute. Sprinkle with chopped peanuts to serve (optional).
Can use angel hair pasta instead.
