Apricot and Pear Cake
Serves 10
2 oranges, juiced 1 cup whole dried apricots, roughly chopped 1 cup superfine sugar 1 cup olive oil 2 eggs, at room temperature (large) 1 teas vanilla extract 2 cups all purpose flour 2 teas ground cinnamon 1 teas ground nutmeg 1 teas baking soda 2 firm pears, peeled cores removed, diced 2 tabs powdered sugar
Heat 1/2 cup orange juice and apricots in a saucepan over medium heat until warm. Remove from heat. Stand for 30 mins. Preheat oven to 325oF. Grease an 8" (base) springform cake pan and line base and sides with baking paper. Using a electric mixer, beat sugar, oil, eggs and vanilla in a large bowl until thick. Sift flour, cinnamon, nutmeg and bicarbonate of soda over egg mixture. Add apricot mixture and pear. Stir until well combined. Spoon mixture into pan. Smooth top. Bake cake for 60-70 minutes or until a skewer inserted into the centre comes out clean. Allow to cool for 5 minutes in pan before releasing the side to cool completely. Dust cake with powdered sugar. Serve.
