Cranberry Fruit Cake Metric* 3 cups mixed dried fruit i.e. raisins etc. 2/3 cups brown sugar 1 1/2 cups fruit juice of choice 2 tabs rum, sherry or brandy, optional 2 large egg whites, lightly whisked 1/4 cup canola oil 2 1/4 cups self-rising wholemeal flour 300g frozen cranberries The day before: combine dried fruit, sugar, juice and rum in a bowl. Cover and stand overnight. Next day: Preheat oven at 160oC or 140oC fan forced for 10 minutes. Line a large loaf pan with baking paper. Beat egg whites and oil into fruit and fold in flour, fold in frozen cranberries. Spoon into loaf pan and bake in the lower half of oven for 2 1/2 hours, or until cooked. Cool completely then wrap in foil and store for up to a month in a cool place.
