Low Fat Apple-Nut Cakes
Ingredients
4oz Butter 1 cup raw sugar 7oz Creamed Cottage Cheese grated rind of 1 lemon 1 tablespoon lemon juice 2 eggs, lightly beaten 2 cups wholemeal self-rising flour 1/2 cup macadamia nuts, chopped 1 cup finely chopped dried apple pieces Method
Cream butter and sugar together until softened. Beat in cottage cheese, lemon rind and juice. Gradually beat in the eggs. Fold in flour, nuts and dried apple. Spoon tablespoons of mixture into buttered patty pans and bake at 350oF for 30 minutes.
