Berry B uttermilk Ice Cream
This smooth, rich-tasting, homemade ice cream is surprisingly lower in calories than ordinary ice cream... and so fun. Enjoy! 1/2 cup dry SACO b uttermilk Blend 1 cup granulated sugar 3 cups lowfat milk 1 tsp. vanilla extract 1/2 tsp. lemon rind, grated 1 cup fresh blueberries*
In small saucepan combine SACO ****ermilk Blend and sugar. Stir in milk. Heat to 150°F, or until mixture becomes warm, smooth and slightly thickened. Add vanilla and lemon rind. Chill 4 hours or overnight. Freeze mix in ice cream maker according to manufacturer's directions. Coarsely puree berries and add when ice cream is partially frozen. Continue chilling until ready. Yields 1 quart.
*May substitute 1 cup frozen, thawed strawberries and 1/2 tsp. grated orange rind, or 1 cup sliced fresh strawberries sweetened with 2 Tbsp. granulated sugar.
