I had to find out about the rolls violet was talking about today. They would be great for those who like crab sticks from the fish and chip shop. Or am I being silly? ;D California RollServes 4 Degree of difficulty: High You need: Bamboo Mat Sheet of Nori dried seaweed 200gm of Sushi Rice one and a half crab sticks one cucumber - cut lengthways like chopsticks one avocado – similarly sliced mayonnaise one lettuce leaf butter one tablespoon of Flying-Fish Roe. Sushi Rice Two thirds of Sushi Rice One third of calrose rice Rice softener and steam When cooked, tip into a large wooden cooling tray and mix in rice wine, vinegar and sugar. Method: Spread the the rice on the Nori sheet leaving a two-centimetre gap at the top. Lay down the crabsticks crossed across the middle followed by the avocado and cucumber and sprinkle with the flying-fish roe squeeze the mayonnaise over these ingredients and cover with the lettuce. Using the mat, roll from the bottom to the top of the rice stops, squeeze lightly, ensuring the lettuce and other ingredients are inside. Finish rolling, withdrawing the mat. Leave for one minute before slicing so that Nori sticks. From: www.abc.net.au/darwin/stories/s506843.htm

We use the recipe on the back of the sushi rice pack. It's a Calrose one, just from the supermarket. It's very short grained and VERY sticky. We also leave out the mayonnaise. www.sunrice.com.au/product/product4.aspWhen I read the actual recipe, we leave a lot out! None of us like wasabi or ginger either, so ours are made with the seaweed stuff, sushi rice, sushi vinegar, and usually just canned tuna cucumber. www.sunrice.com.au/recipe/recipeview.asp?id=32
