Amish Buttermilk Biscuits
3 cup flour 1/4 cup instant lowfat dry milk (i 1 used nonfat) 1 tablespoon baking powder 2 tablespoon sugar (i used less) 1 teaspoon salt 2 teaspoon cream of tartar 1/2 cup cold butter in pieces 1/2 cup cold lard 14 tablespoon cold buttermilk
Pulse the dry ingredients with the butter and lard until grainy, NOT blended! Add the cold buttermilk, and mix until the dough comes together.
Place dough on a floured cloth or marble slab, and knead a few times with floured hands. (Keep the dough cold!) Pat or roll out to 3/4-inch thick, and cut out biscuit rounds or shapes. (You can use a cookie cutter!)
These biscuits can be frozen ahead, or baked immediately.
Baking time: Bake at 400 degrees F for 13-15 minutes if fresh, and 15-18 minutes if frozen.
julieann: A long while back you posted a recipe for Easy Sauce by Reg and Jack Absalom, I just wanted to say thank you so much, and to mention that it is pretty good for making tomato relish. I am an Aussie living in the USA. No easy access to Ezy Sauce.JulieAnn
