Cheesy Eggplant Bake
Serves 8
2 large eggplants, sliced (purple vegetable) 1 clove garlic, crushed 2 onions, chopped 400g (14oz) lean hamburger 14oz can reduced salt peeled tomatoes 1 tab reduced salt tomato paste 5oz cottage cheese (pot cheese, farmer's cheese) 5oz ricotta cheese
Brush eggplant with water on both sides and grill until golden. In a non stick frypan cook the garlic, onion and beef until browned. Add tomatoes and tomato paste and simmer for 10-15 minutes or until thickened. Combine the cottage cheese and ricotta in a blender or food processor and blend until smooth. Place half the eggplant slices over the bottom of an ovenproof baking dish. Pour over half the meat mixture and half the cheese sauce. Repeat with remaining eggplant, meat and sauce. Bake at 190oC (hotter than 350oF) for 40 mins or until top is golden. Serve with a bread roll.
