Carrot & Zucchini Loaf
Serves 10
4oz reduced fat cream cheese 1/2 cup superfine sugar or Splenda 3 eggs, lightly beaten 1 1/2 cups self-rising flour 1/4 cup skim milk 1 cup grated carrot 1 cup grated zucchini/squash 1/4 cup currants i.e. tiny black raisins
Beat the cream cheese and sugar together until well combined, then gradually beat in the eggs. Fold in the flour and milk alternately. Fold in remaining ingredients until well combined. Spoon mixture into a grease-proof paper lined 11cm x 30cm (12") loaf tin and bake at 350oF for 1 hour. Can be thinly sliced and used to accompany a cheese platter.
