Yvonne's Diabetic Christmas cake "Diabetes, What to eat and why" by Christine Roberts, Jennifer McDonalad and Margaret Cox. This recipe also featured in the (Australian) Weekly Times Christmas liftout 14 Nov 1990 1 & 1/2 cup (metric) of sultanas/golden raisins 2 tablespoons of brandy 1 cup of sieved pumpkin (no lumps) 1/2 cup of apple concentrate 1/2 cup of chopped pecans 1 teaspoon mixed spice 1 cup wholemeal self-rising flour 1 cup white self-rising flour 1& 1/2 cups of large raisins, chopped 2 eggs, beaten 1/2 cup of skim or low fat milk 1 teaspoon of ground cinnamon 1/2 teaspoon bicarbonate of soda/baking soda Mix sultanas, raisins, brandy and water and soak overnight. Mix pumpkin, eggs, apple concentrate, milk and soaked fruit, nuts and spices, then sifted flour and bicarbonate soda with a wooden spoon. Spooon into a lightly greased cake tin and bake for 10 mins at 200oC then turn down the heat ti 180oC/350oF and bake until cooked through and browned about 1 - 1 & 1/4 hours. Cool on a cake rack.
