"Vegetable and Garlic Chicken With Rice Serves: 4 Preparation Time: 10 mins Cooking Time: 20 mins Ingredients: 2 cups (400g) SunRice Doongara CleverRice 4 cups (1 litre) chicken stock or water 1 tblspn oil 500g chicken breast or thigh fillets, thinly sliced 1 tspn crushed garlic 2 cups vegetables: red capsicum, green beans, broccoli 2 tblspns oyster sauce 1/4 cup stock or water Method: 1) Bring stock (or water) and rice to the boil. Reduce heat and simmer, covered, for 12 minutes. Remove from heat and stand, covered, while preparing chicken. 2) Heat oil in pan over moderately high heat and cook chicken and garlic until lightly browned, 3-4 minutes, stirring continuously. Reduce heat and add vegetables, oyster sauce and 1/4 cup of stock (or water) and simmer 3-4 minutes until vegetables are just cooked. Serve on or stirred through rice. Tips: Marinate chicken for 15 minutes or longer in oyster sauce before cooking for added flavour.
