Chilli Con Carne Serves: 4 Preparation Time: 5 minutes Cooking Time: 30 minutes Ingredients 500g/1lb lean beef topside mince/hamburger 2 tblsp canola oil 1 onion, finely chopped 1 tblsp crushed garlic 1/4 cup tomato paste 400g can tomatoes, with their juice 1 tblsp sugar 290 g can red kidney beans, drained Mexican chilli powder, to taste Chopped parsley Method 1. Heat oil in a large deep frypan on high. Fry onion and garlic for 1-2 minutes. 2. Add mince, stirring constantly until well browned. Note: mince should be well cooked until no longer pink. 3. Stir in remaining ingredients. When boiling, reduce to low heat, cover and simmer (cooking gently at a level where tiny bubbles rise to the surface) for 20 minutes. Stir occasionally. 4. Serve over baked jacket potatoes; brown or white rice; in taco shells or with tortillas or burritos. Top with a dollop of lite sour cream if desired and serve accompanied by a salad.
