8 ounces fresh orange juice 2 Tbsp reduced-sodium soy sauce 1 Tbsp rice wine or apple cider vinegar 2 large cloves garlic, minced, or 1 teaspoon garlic powder 1 Tbsp chopped fresh ginger or 1 teaspoon ground 2 tsp crushed red pepper 2 tsp freshly ground black pepper 1 tsp orange peel 1 pound bottom round, trimmed and cut into 1 1/2" cubes 1 large zucchini, sliced 1/2" thick 1 yellow bell pepper, cut into 2" chunks 1 red bell pepper, cut into 2" chunks
In a flat baking dish, whisk together the orange juice, soy sauce, vinegar, garlic, ginger, red and black pepper, and orange peel. Place the beef and vegetables in the dish, coating well with the marinade. Cover the dish with plastic wrap. Marinate in the refrigerator for at least 2 to 3 hours.
Preheat the grill.
Alternate the beef and vegetables on eight 8" or four 10" to 12" skewers. Place the kebabs over heat and grill each side for 4 to 5 minutes, or until cooked through.
