Greek Romaine SaladMakes 8 servings 3 tbsp Feta, crumbled 3 tbsp Red wine vinegar 2 tbsp Olive oil 1 clove Garlic, minced 1/2 tsp Oregano 1/2 tsp Pepper 1 large head Romaine lettuce 110g Zucchini, julienned 60g Red onions, thinly sliced 1 Pepper, red or green, diced 16 Cherry tomatoes, halved 30 g Black olives, sliced 30 g Feta, crumbled 1. To make the dressing: process the first 6 ingredients in a food processor (or blender) until smooth. 2. Tear romaine into bite size pieces. Toss with zucchini, onion, pepper, and cherry tomatoes in a large salad bowl. Drizzle with dressing & toss to mix. 3. Mound onto individual salad plates. Garnish with sliced olives and remaining feta. Serve immediately. To 'julienne vegetables' means to cut in match-stick size strips.
