Dd and I love refried beans. I use kidney beans, soak overnight, boil up the next day. Once cooked, a finely diced onion is sauteed in light olive oil in a stainless steel frypan, then in go about half of the beans. I keep the pan over a medium-low heat, and mash the beans while adding oil until they get to an almost creamy consistency. I add a little salt while mashing.
We put a good scoop of refried beans on a square of mountain bread - the corn variety - and sprinkle on some grated cheese and mild taco sauce. They are delicious. If they're for a meal, I'll add a salad.
