1/2 cup onions, chopped finely 1/2 cup diced celery 4 Tbsp margarine 3 cups frozen broccoli 1 can cream of mushroom soup 1/3 lb shredded cheese 2 eggs (I use Egg beaters) 2 cups cooked rice 1/2 cup cracker crumbs 1/2 cup peanuts, chopped Preheat oven to 375°F. Saute onions and celery in margarine. Remove from heat. Add the rest of the ignredients (except peanuts and cracker crumbs), mix well, and pour into a greased 2-1/2 quart casserole dish. Melt some margarine and brown the cracker crumbs lightly. Sprinkle over the top. Bake for 45 minutes at 350°F. After 30 minutes, sprinkle chopped unsallted peanuts on top of casserole (optional).
