A great Aussie tradition. My kids would love to make their own I'm sure.
Coconut Crumpets with Lemon butter and Roasted Fruits
Serves 4
Degree of difficulty: Low
You need:
Crumpets
caster Sugar, 1 cups
yeast, dry, 1 sachet
plain Flour, 600g
coconut Milk, 350ml
coconut Cream, 800ml
water, 400ml
salt, 1 teaspoon
bicarbonate of Soda, 1 teaspoon
canola oil spray
Lemon butter
butter, 100gm
pure Lemon Oil, 4 drops
lemon zest of 2 lemons
icing Sugar, 50gm
Roasted fruit
pear, 1 each
apple, 1 each
strawberry, 1 punnet
peach, 1 each
raspberries, ½ cup
blueberries, ½ cup
sugar, ½ cup
water, 1 tablespoon
butter, ½ tablespoon
Method:
Crumpets
-Place sugar, yeast and flour in a bowl.
Warm the coconut milk, coconut cream and water until tepid (THIS IS VERY IMPORTANT!!!)
-Whisk milk mix into flour mix until a smooth batter.
-Cover and leave in a warm place for 2 hours (or until doubled in size)
-Beat in the salt and bi-carb and leave to rest for 10 minutes.
Heat the fry pan over medium heat. Spray with non stick spray or use a non stick pan. Grease two 9cm cookie cutter with a height of 2 cm as well or a couple of egg rings.
-Fill each mould with batter. Cook until golden and surface is set (about 6 minutes).
-Turn over and cook for a further 3 minutes.
-Serve with the roasted fruits and lemon butter.
Lemon butter
-Blend all ingredients together until smooth.
Roasted fruit
-Dice pear, apple and peaches.
-Heat a large pan and add the butter.
-Add the diced apple, pear and peach. Fry until golden brown. Add the sugar and water and cook until caramelised.
-Pour the fruits into a bowl.
-Re heat pan (without cleaning) and add halved strawberries and berries and cook until golden and slightly softened. Add the berries to the apple mix and fold through to combine.
