That's the title this soup is under in July's Women's Health Magazine. Sounds perfect for winter. I will try it tonight.
"Beat stress and anger with this soup: it contains quality low-GI carbs and protein that will encourage your body to release serotonin to help keep you calm. It's also chock-full of the minerals zinc and magnesium, that can help with stress by strengthening the immune system."
Serves 6, cooking time 30 mins.
1tsp olive oil 1 onion, chopped 2 carrots, grated 1 tsp paprika 400g tin chickpeas, drained 1 cup brown lentils 400g tin chopped tomatoes 1.2L vegetable stock 1/2 cup chopped parsley 1/2 cup chopped coriander (I will leave this out - don't like coriander)
Heat oil in pan and cook onion and carrots for 5 minutes.
Add paprika, chickpeas, lentils, tomato and stock. Cover and simmer for 20 minutes on medium heat until soup is thick and vegies are cooked.
Garnish with parsley and coriander before serving with crusty wholegrain bread.

I love paprika. I wonder if they mean canned or dried lentils? I don't like coriander either and usually it can be left out. I accidently forgot the tins of tomatoes yesterday, which didn't inspire dh. I nearly bought them in the fruit order just in case I forgot. It is nearly like a standard lentil soup recipe, like the one we used from an old Women's Weekly book "Italian" I think. It would be interesting to try it with chickpeas. I bought a cooking magazine yesterday, I haven't done that for awhile.

I used dried lentils. The chickpeas, paprika and tomatoes give it a different taste from my 'regular' lentil soup. Next time around I'll throw in some tomato paste as well. It was very filling, and both dh and younger ds liked it.
