I seem to be a little ahead of myself. March 1 ~ Chorizo & Potato Tacos March 2 ~ Chorizo and Tomato Pasta (I have already made it and am going to find a better recipe. I think this one. Chorizo TrevelleCooking Time:25 minutes Serves:4 * 300g Vetta Trevelle No.85 * 1 tablespoons olive oil * 1 large cooked Chorizo sausage * 1 clove garlic, chopped * 2 × 400g cans peeled and chopped tomatoes * 1 cup rocket leaves * ¼ cup fresh flat leaf parsley, finely chopped * 150g mozzarella, drained and evenly diced * 1 tablespoon freshly grated parmesan * salt and freshly ground black pepper 1. In a pan heat the oil then add the chorizo and garlic and cook for 2-3 minutes. 2. Pour in the canned tomatoes and bring to the boil, reduce the heat and simmer for 10 minutes. 3. Vetta Trevelle Meanwhile, cook the pasta in a saucepan of boiling salty water for 8-10 minutes. 4. Stir the rocket and half the parsley into the tomato sauce. 5. Season well. 6. Drain pasta and combine the tomato sauce, mozzarella and half the parmesan cheese with the pasta. 7. Serve hot sprinkled with the remaining parsley and parmesan cheese. The recipe I made first was very similar. They didn't suggest frying the chorizo. DH however always fries chorizo first and it is lovely like that. The first recipe had cream in it, but I didn't realise that dh used up the cream in his last recipe and I thought there was some left.

I have to do some more thinking about the menu today.
The soup didn't turn out. The only cans of pea and ham soup the shop had were ready to serve ones. They wouldn't go far for 7 people. I think I will have brussel sprouts and speck or something like that, since I have some in the freezer. I have a recipe somewhere as well. I think I am collecting up a few plan B's lol.
