Today we cheated as it was so hot and everyone was going to be in at different times. Dh brought home 2 pieces of grilled fish, some chips, and a lamb souvlaki for dd. I washed a pile of baby spinach (ds's favorite), put out some cut-up fruit, pasta and fried eggs. Sounds disgusting, but they were all happy indeed!
Yesterday's dinner was: for dd, I made a vegetable and rice noodle dish with black bean sauce. She wanted lots of red capsicum and spring onions, as well as zucchini and carrot.
For ds, I chopped some red capsicum, zucchini, onion, garlic, mushrooms and spinach, sauteed it all then threw it in some provisto sugo with basil, oregano and black pepper. While that simmered I boiled some cute curly pasta (like twisted macaroni with lines down it), then mixed it together and he loved it.
For dh, I used the rest of the vegetables from above and made a frittata with them, with the addition of some sliced black olives. He loves that, so that was 3 happy people. Younger ds is still away, or it would have been 4 meals for dinner lol.
When younger ds isn't home, so long as there is a selection of veg, some pasta and some peeled tomatoes, dinner's easy.

Yesterday was hot, I only feel fresh now and I expect it will get sticky in a few hours.
I finally after making it a few times worked out that sugo means sauce in Italian I think lol.
I love fried eggs, and also black bean sauce, which is an Asian black bean not black turtle beans, although I like those as well.
Frittata sounds hard to me lol.
