1 egg 2 cups biscuit mix 1/3 cup sugar 2/3 cup milk 2 tsp. grated lemon zest 1 and 1/2 cups frozen blueberries, thawed, rinsed and drained 2/3 cup confectioner's sugar 1 Tbsp. fresh lemon juice
Combine egg, biscuit mix, sugar, milk and lemon zest and mix well. Gently fold in blueberries. Pour into a lightly greased 9-inch round pan. Bake at 400°F. for 20 - 25 minutes. Combine confectioner's sugar and lemon juice to make glaze. Drizzle over cake before serving.
The Skinny: Use your favorite egg and sugar substitute and fat free milk.
