Lemon-Orange Picnic Cake
Ckae:
1 cup all-purpose flour
3/4 cup sugar
1 1/2 tsp grated orange peel
1 tsp grated lemon peel
1 tsp baking powder
1/4 tsp salt
1/3 cup milk
1/4 cup shortening
2 tbsp orange juice
3 egg whites
Topping:
1/4 cup sugar
2 tsp lemon juice
1 tsp orange juice
Heat oven to 350°F.
Spray bottom only of 8-inch square pan with nonstick cooking spray.
In large bowl, combine all cake ingredients, beat at low speed until moistened.
Beat 2 minutes at medium speed.
Pour into sprayed pan.
Bake at 350 for 25 to 32 minutes or until
cake is light golden brown and cake tests clean.
In small bowl, combine all topping ingredients; mix well.
Spread over warm cake.
Cool 45 minutes or until completely cooled.
