Ritz-Carlton Carrot Cake
Preheat oven to 350°F
3 cups grated carrots (1 lb)
2 cups flour
2 cups sugar
2 tsp cinnamon
2 tsp baking power
2 tsp baking soda
1 tsp salt
1 1/2 cups vegetable oil
4 large eggs
3/4 cup nuts
Frosting ----
1 stick of butter
8 oz cream cheese
1 tsp vanilla
1 lb pkg confection sugar.
In a large mixing bowl add flour, sugar, cinnamon, baking soda, baking powder, salt, oil.
Add eggs.
Blend spoon stir carrots in.
Pour into 2 greased and floured 9" layer pans bake in a 350° F oven 40 minutes.
Frosting ----
soften butter, cream cheese, add vanilla and confection sugar.
Servings - 4-8
