Chicken a La Queen
SERVES: 6
600g raw chicken breasts cut into strips (no skin)
2 pkts cream of chicken soup
7 cups vegetables ego celery sliced, mushrooms sliced, small broccoli florets, carrots sliced, peas or snow peas, beans, capsicum
I onion (diced) or I leek (sliced) 3 cups skim milk
I cup stock water
I teaspoon crushed garlic
1/2 teaspoon tarragon or curry (we use curry and it is a rally light flavour)
Microwave all vegetables on high for 10 minutes except mushrooms, drain and set aside 1 cup stock water. Sauté garlic for 1 minute in a large saucepan that has been coated with cooking spray. Add chicken and sauté till cooked. Stir in milk, soup mix and tarragon, bring to boil, stirring constantly. Add vegetables and stock water to pot. Toss in mushrooms, stir ingredients together. Cook a further 5 minutes. Serve with boiled rice or pasta.
Our variation is to use CURRY instead of Tarragon.
VARIATIONS:
Replace chicken with 600g PRAV1!lVS
or Replace chicken with 600g drained canned TUNA (in brine).
