Lemon Pressed Olive Oil Cake (Citrus Olive Oil Cake Recipe) This cake recipe serves 10 people Ingredients: 1 orange (rind) 2 lemons (rind) 4 eggs ¾ cup sugar 250gms flour 2 tsp salt 2/3 Cup Toscana Olives Premium Lemon Pressed Olive Oil ½ cup whole blanched roasted almonds (chopped) Method: - Pre heat oven to 180C. - Beat the eggs & sugar together until sugar is dissolved and the egg mix is firm. - Sift flour & salt together. - Roughly chop roasted almond - Gently fold flour, olive oil & almonds into the egg mix - Pour into a lined 20cm tin - Bake for 1 hour. - Check with a skewer to see if cooked. - Allow cake to cool before turning out on to cooling rack.
