Wholemeal Apple Cinnamon Cake
185g (6oz) butter or substitute 3/4 cup raw sugar 2 eggs 2 green apples 2 cups wholemeal SR flour 2 teaspoons cinnamon 1/4 cup milk 125g (4oz) raisins (not golden raisins) 2 teaspoons raw sugar extra 1 teaspoon cinnamon
Cream butter and sugar until creamy, add eggs one at a time, beating well after each addition. Peel and grate apples, add to creamed butter and sugar, mix well. Grease 23cm x 12 cm (9in x 5in) loaf tin, line base with greased greaseproof paper. Spoon cake mixture evenly into tin, sprinkle top of cake with combine extra sugar and extra cinnamon. Bake in moderate oven for 1 hour or until cooked when tested. Turn the cake out and cool on wire rack.
