Coconut Meringue Brownies
3/4 cup butter softened 1-1/2 cups packed brown sugar, divided 1/2 cup sugar 3 eggs separated 1 tsp vanilla 2 cups all purpose flour 1 tsp b powder 1/4 tsp soda 1/4 tsp salt 2 cups (12 ounces) semisweet chocolate chips 1 cup flaked coconut 3/4 cup chopped walnuts
In large mixing bowl cream butter, 1/2 brown sugar, and sugar. Add egg yolks and vanilla. Beat on medium speed for 2 minutes. Combine flour, baking powder, baking soda and salt. Add to creamed mixture and mix well. the batter will be thick. Spread into a greased 13 x 9 inch pan. Sprinkle with chocolate chips, coconut and walnuts. In a small mixing bowl beat egg whites until soft peaks form. Gradually beat in remaining brown sugar. 1 Tbsp at a time. Beat until stiff peaks form. Spread over top. Bake at 350°F. for 30-35 minutes or until brownies test clean. Cool on wire rack. Cut into bars. Store in refrigerator. Makes 3 to 3 1/2 dozen.
