I posted this in the wrong place earlier I usually have to make two of these at a time...I have made four inthe past week alone! I have tried it in small loaf pans, but it doesn't work well. It almost always flows over the pan, so place a sheet of foil underneath or a cookie sheet. Preheat oven to 350 2 large apples, diced into thumbnail size 1 stick of butter (½ cup) 1-cup sugar 1 large egg 1 tsp. baking soda dash salt 1 tsp. cinnamon ½ tsp. nutmeg 1 ¼ -cup flour In a large bowl, cream the butter. Add the sugar and beat until fluffy. Add egg and beat until blended, then mix in baking soda, salt, cinnamon and nutmeg. Add the flour and stir until just blended. Stir in the apples. Pour into an oiled 9 inch round cake pan and bake for 30 minutes or until the top springs back when touched lightly.
