Printed in the June 2002 edition. Banana BreadPreheat oven to 180oC. Lightly grease a 7cm deep, 22cm x 8 1/2cm loaf tin with butter and a piece of paper towel Beat 2 eggs in a bowl with a fork until the egg yolk and eggwhite is mixed together. Mash 3 ripe bananas with a fork and add to the egg mix. Sift in 2 cups plain flour, 3/4 cup caster sugar, 1 teaspoon bicarbonate of soda, 1 teaspoon salt and 1/2 cup chopped walnuts. Stir ingredients together well, then pour into the loaf tin. Bake for about 1 hour. For an extra-yummy flavour, slice banana bread, toast it and serve warm spread with butter. I am not sure if this should be posted in cakes or breads.
