I know I don't like bars and have had this discussion with my Mum, but I found this course that allows you to work in NSW, and since you'd had the practise it should be straight forward. They offered a course like this at the school the boys went to. It was run by a provider similar to the one in your link, Br, and was very popular. My kids didn't do it.
Younger ds has a number of friends who did this course, and they've all since gone on to day jobs. They worked shockingly long hours around Melbourne Cup and Grand Prix, etc, times, and worked through the night at other times.
Younger ds himself worked in a nightclub for about a year. I hated it; they would start work at 10 or 11 pm and come home around 6am. It's awful, so make sure the places they could get work are more like bowls or RSL clubs that close by 1 or 2 am if that aspect concerns you.
Another aspect of that horrible nightlife scene that I disliked was the violence. People would drink and become angry and violent. There was a dreadful case that was reported all through the media of a young man who ended up with his eye socket being impaled by the leg of a chair (with chair still attached). It happened outside the club younger ds worked at. He wasn't there much longer after that.

I was wondering what happened. Not very nice.
We were after a job at the country club, I don't imagine they work during the early hours of the morning.
I just hope my son sees the need to push himself past the barrier he has put in his mind about English, then things would go smoothly I think. Yesterday he had 30 items to do for Chemistry and he didn't push himself with that either. One teacher said last year it is practise. One teacher got stern with him yesterday and it seemed to have worked, so if he could get him to do this work that needs tenacity that would be the practise he needs with pushing himself. The last year's teachers said if you work fast it gets better, or something like that.
