This is another recipe that I hadn't heard of, like I hadn't heard of the 5 cup cake. It is very nice, but rich if you are not used to rich puddings, though OK. I got it from a school fundraiser book that they have reprinted. The kids have mostly grown up now.
Sweet Impossible Pie
1/2 cup plain flour 2 cups of milk 2 teaspoons vanilla essence 4 eggs 125g soft butter 1 cup of castor sugar 1 cup dessicated coconut
Put all ingredients into a bowl. Beat with an electric mixer until well mixed and pour into a greased flan or casserole dish.
Bake for one hour at 175oC.
This pie will cook with a base, a custard filling and a coconut topping.

Not sure if it's exactly the same, but I used to make impossible pie. Easy, delicious, and great name. ;D
