I'm struggling with this. It's much easier to have a meal plan, but the numbers and times are becoming complicated.
Tonight I made a gluten-free chicken and mushroom casserole, minus the mushrooms which I forgot to buy, but with plenty of other veg. Then eldest ds asked to bring the gf here for dinner, which meant there would not have been enough food for 6 so I also made a chicken korma. That is in the slow cooker to be ready when younger ds arrives home from work at 9.30pm. It will do him for 2 days. He can have it for dinner again tomorrow, and the rest of us will have pasta or fried rice or lentil soup.
I'm finding myself cooking two different dinners at night far too often, or just having an egg myself so that the dinner goes further.
The other issue is that no one will eat sausages or anything vaguely fatty, dd's not supposed to have lactose or gluten, and younger ds is impossible to fill because of his running and gym commitments.
So, to the point of my post: I really have to get back to thorough meal-planning because it is getting ridiculous.
And your meal plans always sound so delicious, Br.

Tonight the two girls were out for tea/dinner at Youth. We had a storm and the camp got postponed so they had a BBQ instead. I found that hard. I guess dh and I will enjoy the sausage stew for lunch. He said I didn't get enough beans, I felt really bad, then later he apologised that it was the wrong beans. We are really jumpy about shopping. Tonight we needed frozen roast potatoes, and he could only find frozen french fries. Being a Friday it is quite possible that they had run out. When he thought he didn't have enough beans I suggested making the meal for four, but he said he wanted to make the meal for the usual six. Food is a tricky balancing act, I reckon. Haven't seen that link, Br, so thanks for posting it. I will check it out right now. Hope you've got a nice cool day and are able to enjoy your stew for lunch.
