"Joanne's healthy cake recipe
This banana bread is actually good for you as it provides some very healthful nutrients. It is a storehouse of good fats and also provides some excellent antioxidants. It is sweet and rich but contains no added sugar and is wheat and dairy free.
You need: Bananas Olive or macadamia oil Rolled oats Sultanas or dates Crushed walnuts Sunflower seeds or pepitas Cinnamon Vanilla essence Baking powder Buckwheat or spelt flour
Method: Mash some bananas in a mixing bowl. Drizzle in a little olive or macadamia nut oil. Add a handful of rolled oats, a sprinkle of sultanas and/or chopped dates, crushed walnuts, sunflower seeds and/or pepitas, a sprinkle of cinnamon, a few drops of vanilla essence, a teaspoon of baking powder, enough buckwheat or spelt flour to bind the mixture. Pour into a well greased loaf tin, flatten the top with a fork and sprinkle with poppy seeds or walnuts.
Quantities and ingredients are flexible, just make sure the final mixture is somewhere between dropping consistency (as for cake) and ear lobe consistency (as for bread).
Cook in moderate oven for about 45 minutes at 180 degrees. Test if cake is cooked by sticking a knife in the centre. It should come out fairly clean.
Serving Suggestion: For a delicious breakfast pan fry a slice in a little olive oil, serve with yoghurt and drizzle with maple syrup.
For kids' parties this cake can be iced with a mixture made from softened cream cheese, lemon juice and icing sugar." From above web address.
