Sauerkraut cake: recipe following
COCOA SAUERKRAUT CAKE 1/2 c. butter or margarine 1 1/2 c. sugar 3 eggs 1 tsp. vanilla 2 c. flour 1/2 c. cocoa 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 c. chopped, drained and rinsed sauerkraut 1 1/3 c. water --SOUR CREAM FROSTING:-- 1 pkg. (6 oz.) semi-sweet chocolate chips 4 tbsp. butter 1/2 c. sour cream 1 tsp. vanilla 2 c. powdered sugar Cream butter and sugar. Add eggs one at a time and beat well. Add vanilla. Sift together flour, cocoa, baking powder, baking soda and salt. Add alternately with 1 1/3 cups water. Fold in sauerkraut. Bake in greased 9x13 inch pan 35-45 minutes at 325 degrees. Frost with Sour Cream Frosting. Melt together chips and butter over low heat. Remove from heat and stir in sour cream, vanilla and enough powdered sugar to spread well.
Bread- recipe follows
Cottage Cheese Kraut Bread
1 tbs. dry yeast ¼ cup warm water ½ cup cottage cheese 2 tbs. brown sugar 1 tbs. Margarine 1 tsp. salt 1 egg 2 tsp. caraway seeds 2 tsp. minced onion 2-¼ cup flour 1 cup sauerkraut, drained
1. In a bowl dissolve yeast in warm water. In a saucepan, combine cottage cheese, salt heat to lukewarm (100 degrees). Add yeast to cottage cheese mixture. 2. Stir in egg, caraway seeds, onion and ¼ cup of flour. Beat this batter very well. 3. Add rest of flour mix thoroughly. Stir in sauerkraut. 4. Turn mixture on to floured surface and knead until plump. Put in greased bowl, cover and leave in a warm place until doubled in size about 1-½ hours. 5. Punch down and put into greased brad pan. Let rise again until doubled in size. Preheat oven to 400 degrees and bake 20-25 minutes. Bread is done when crust gives a hollow sound when tapped.

Penne with Swiss Chard and Toasted Pine Nuts Recipe: 1 pound dried penne pasta, cooked and kept warm, reserving 1/2 cup cooking water 2 Tbsp extra virgin olive oil, divided use 5 large cloves garlic, minced 1/4 tsp red pepper, crushed 8 cups (10 ounces) Swiss chard or spinach leves, coarsely chopped 2 Tbsp pine nuts, toasted 1/4 cup (1 ounce) freshly grated Romano cheese, divided use 1/4 teaspoon ground black pepper Heat 1 Tbsp olive oil in large, nonstick skillet over medium-high heat. Add garlic and crushed red pepper; cook for 30 seconds. Add Swiss chard; cook, stirring occasionally, for 5 to 7 minutes or until Swiss chard is wilted. Stir in reserved cooking water, pasta, and remaining olive oil. Sprinkle with pine nuts, 3 Tbsp cheese, and black pepper. Sprinkle with remaining cheese. Makes 4 servings.
Swiss Chard Cranberries Recipe: 2 pounds Swiss chard, washed and trimmed 1 1/2 Tbsp olive oil 2 cloves garlic, minced 1/2 cup pine nuts 1/2 cup dried cranberries, soak in warm water 10 minutes, drained Salt and freshly ground black pepper to taste optional as needed
Cut the chard stems into 1 to 2 inch lengths and chop the leaves. Steam the stems until they are almost tender. Add the chopped leaves. Continue to cook until chard is tender. Drain. When cool, squeeze dry. Heat oil in a skillet and add garlic, cooking until it just begins to color. Add the pine nuts and cook another minute, stirring constantly. Add the chard, cranberries, salt and pepper and finish cooking, another couple of minutes. Serve hot or at room temperature. This recipe also works well with spinach. Makes 6 servings.

Creamy Swiss Chard with Red Kidney Beans Recipe:
1 1/2 Tbsp vegetable oil 1/2 c. finely chopped onion 4 c. bite size pieces of Swiss chard 1 1/2 c. cooked kidney beans (cooked from dry; or canned, drained) 1/2 c. sour cream 1/4 tsp. salt or to taste 1/8 tsp. pepper in a large skillet heat the oil on medium high heat, add the onions, cook, stirring until translucent about 2 minutes. Add the Swiss chard, cook stirring until wilted about 3 minutes. Add the beans, cook stirring until heated through. Remove from heat, stir in the sour cream, salt and pepper.
