Today I bought a feijoa. I think I may have mentioned that they are good screening plants that are drought tolerant. They have grey leaves and red flowers.
Ginger and Feijoa Cake
This recipe can be done in a pretty rough manner. If you have no raw sugar white will do the trick, the spices can be changed to suit tastes and it can be made in non ring pans with no ill effects. Its a great recipe for kids to learn on as it always come out fine. Method
Preheat oven to 180 C. Melt the butter in a largish pot. Add feijoas and sugar and cook till sugar dissolved. Add in dry ingredients and mix. At this point the mix will be a litte frothy. Pour into a greased and lined ring pan and bake for 40 minutes. Let cool in pan and turn out.
Ingredients
500g peeled and chopped feijoas
2 -3 tablespoons chopped crystallised ginger
125 g butter
3/4 cup raw sugar
1 1/2 cups plain flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon ginger
1/2 teaspoon nutmeg
Feijoa Sauce Ingredients 6 ripe feijoas, peeled (halve them lengthwise) ½ cup water 1 teaspoon sugar 2 tablespoons butter ½ cup white wine Pinch salt
Method Combine the feijoas, water and blend. Using a colander, extract the juice and pour in a pan sauce at medium heat with the rest of the ingredients. Bring to boil until appearance is thick. Serve over broiled fish.
Feijoa Muffins Method
Preheat oven to 200 C Sieve flour,mixed spice, baking powder and sugar into a bowl. Lightly whisk egg and combine with butter and milk. Pour liquid and feijoa pulp into dry ingredients and mix very gently just to combine. Spoon into greased muffin tins and bake for 10-15 minutes until muffins spring back when gently pressed. Ingredients
2 cups flour ½ teaspoon mixed spice 3 teaspoons baking powder 1/2 cup caster sugar 1 egg 100g butter, melted 1 cup milk 1 ½ cups mashed feijoas
