You certainly picked the wrong person for Chef of the Week. I actually do not cook very much. Mel is an extremely picky eater so he's our family cook (since I will eat anything). As for my favorite sandwich - it's a chicken chef sandwich. I like to use leftover shredded grilled chicken on white bread (toasted). I add cooked bacon, lettuce, tomato and cheese. It has to have Miracle Whip instead of mayo also. As you can tell, I'm not too creative in the kitchen.

That sounds really lovely I think. Sounds like some of Mum's cooking that I miss!!
My husband cooks alot too.
What other things do you guys make with leftover chicken? It took me years to think of any btw!

We tend to eat quite a lot of chicken and stretch the leftovers as well. One of Ryan's favorites is chicken fried rice. I have to admit that recently Lipton has came out with a mix for fried rice that we can just add the shredded chicken to and it makes a delicious dish. We also add bbq sauce to our leftover chicken and serve it on a bun as a sandwich. Then of course, there is always chicken and egg noodles with a nice buttery sauce or a light gravy. As you can tell, chicken is a main food at our house.

I love salads. My favorite one to eat out is the Oriental Chicken Salad at Applebees. I only get it maybe once a year but I do love it.
For me, lettuce is the least of what I like in a salad. I love lots of raw veggies, nuts, seeds and even fruit. I love it to have sunflower seeds and raisins.
I also love Waldorf salad and it's one of my favorite summer time snacks. For it, I cut up red delicious apples. Add raisins, , chopped walnuts, white grapes (cut in half) and finely chopped celery. Mix together with Miracle Whip and enjoy.

Pat, your my kind of girl. I don't cook much either. But I do love salads.
Other than chicken do you eat meat? I know your trying to go heathier and wondered if you are considering going vegetarian or vegan??

I could probably be a vegetarian without much trouble but Mel and Ryan are serious meat eaters. We do eat some beef and pork - mainly in the form of roast. We are trying to incorporate fish into our meals but it is a very slow process that none of us is too keen on but we keep trying.
Last night for supper it was Porkkchop Tenderloins, mashed potatoes, crowder peas, applesauce and fresh cucumbers. This is a very normal meal at our house. It also had to be something quick and easy because Ryan and I had to leave for Vacation Bible School at 6:00.
I will share my latest zucchini recipe with you later on today.

Here is my zucchini recipe. I think it would work equally well with most any vegetable combination. BTW, I always adjust the amounts depending on what I have on hand but I'll try and list them the way I originally learned them. 6 cups cut up zucchini 1 cut carrots - shredded or chopped into small pieces 1/2 cup chopped onion - can substitute dried minced onion 1 cup sour cream 1 can Campbells Cream of Whatever soup - I use cream of Chicken and Mushroom 1 box Stove Top Stuffing 1 stick (1/2 cup) butter/margarine - melted Shredded cheese (optional) - everything taste better with cheese Mix sour cream, soup and onion together. Add in zucchini and carrots. Mix well. I add in about 1/2 cup of shredded cheese also and mix again. Mix butter and Stove Top Stuffing in separate bowl. Put 1/2 of this mixture into a casserole dish and press down. Pour the veggie mixture on top and spread well. Then sprinkle on the remaining Stove top mixture. I sprinkle shredded cheese on top of this as well. Bake at 350 for about 45 minutes. I have a gas oven so you may need to adjust the temp and the time for your own oven. Once it's done, remove from oven and allow to "rest" for about 15 minutes before serving. It's actually much better the next day.

Now as for baked goods - I don't make "from scratch" cookies to often because they get ate so fast that it's hardly worth the trouble. Our current favorite is the Nestle Toll House ones in the refrigerated dough case at the grocery store. These are the ones that you can just break apart and cook ever how many you want to.
When I do bake, it's often a fruit cobbler. I have a very simple recipe and I'll share that with you.
2 cups of fruit - fresh or canned. Our cherries are my fav to use. (If the fruit has much syrup, you need to drain it a bit so that the cobbler will not be runny) 1 cup of Bisquick (or self rising flour) 1 cup of milk 1 cup of sugar (more if the fruit is a bit sour) 1 stick of butter/margarine
Melt the butter in a glass casserole dish. Mix the Bisquick, milk and sugar well. Gently pour over the butter. Gently spoon the fruit over this. It will all look runny but don't worry. Bake at 350 for about 45 minutes. Again adjust the time and temp depending on your oven. When I get it out of the oven, I usually very lightly sprinkle some sugar on the top and sometimes a bit of cinnamon depending on the fruit I use.
Now you can really see that I'm a very simple cook.
