~from Gooseberry Patch 2 cups packed brown sugar 2 cups flour 1 cup chopped pecans 2 eggs 2 sticks melted butter *DO NOT USE MARGARINE* Directions: 1. Spray muffin tins 2. Mix all ingredients in bowl 3. Fill muffin tins about 1/2 full 4. Bake at 350 for 20-25 minutes 5. Serve hot These are very good, but very rich. They must have a gazillon calories in them! That's why we don't have them very often.

Wow, that is a nice easy recipe, thanks lynn. I have some pecans, they were hard to come by, but our shop has most things now. I am going to try some bread, but waiting on some buttermilk on shopping day. I used to think a stick of butter was 8oz!!

LOL, BR. You know you can make your own buttermilk by adding a couple of spoonfuls of vinegar or lemon juice to milk. I've done that for years. Just sharing! Let me know how the pecan muffins turn out. ETA: I live in the Pecan Capital of the World. That's what our area is called! I have pecan orchards beside my house, and across the road. Toast some in the oven with some butter and salt....about 250 for maybe 45. Yum yum snack! We also like them roasted with cinnamon, brown sugar and butter.

They were really yummy. Not sure if they were supposed to look shorter, reminded me of friands, not that I have made them. I don't usually love muffins, but your recipe was really nice, ie I did love them.
