So what do you all can each year or what are you planning on canning this year? I hope to do more bread & butter pickles, apple pie filling, peaches, tomatoes, spaghetti sauce, corn and thought about trying my hand at making my own ketchup (or catsup, however you spell it). Oh and I have to make more salsa than I did last year. Jack inhaled the only batch I made!

I will be doing peaches, apples, applesauce, and pickles. I want to also do a hot mix of veggies. Salsas didn't turn out last year.

I bought a packet of mix at Wally's and just added my own tomatoes. Jack loved it! ;D
Hang on I'll get the name for you.
Shoot, I just bought another packet last week, but I think it is buried in that pantry of mine. Soon as I find it, I'll get the name of it for you. I got it right by the canning supplies in Wally's.

I don't plan to can this year...ah but watch out next year..I am going to can whatever Lori grows..LOL

I don't know if you have a product like Wilds ezy-sauce but that is what we use for ketchup when we make it.

Plum Ketchup
6lbs plums (like blood plums) 3lbs sugar 3 pints brown vinegar 2 tabs salt 1 1/2 teaspoons white pepper 1/4 teaspoon cayenne pepper 2oz garlic 1oz cloves 1oz ginger 1lb onions, cut in slices.
Boil together for 1 hour, then strain and bottle. Makes just over 2 flagons.
