I can't figure out where to put this, so please feel free to move it.
I need a good, tried and true recipe for making refrigerator pickles or relish - either cucumber or zucchini. I'm hoping to find one that someone already uses and knows that it works. I don't want to have to process it for canning but want the recipe for the types that last a good while in the refrigerator.
Any help greatly appreciated.

12 lb Cucumbers, very small 1 ea Onion, sliced 4 c Sugar 4 c Vinegar 1/2 c Salt 1 1/3 tb Celery seed 1 1/3 tb Mustard seed 1 1/3 ts Turmeric
Slice cucumbers and onion and place in gallon jars. Mix remaining ingredients well. Pour mixture over cucumbers. ***** lids on tightly. Place in refrigerator. Let stand 5 days before tasting. Will keep for a year.
**I have tried this recipe and it is very tasty and seems to keep longer than the others. **

7 c Sliced cucumbers 2 c Sugar 1 c Sliced sweet onions 1 c White vinegar 1 Bell pepper, finely sliced 1 tb Salt 1 t Celery seed
Combine cucumbers, onion, and bell pepper in a large bowl. Add the sugar, vinegar, salt and celery seed. Mix well. Cover and refrigerate at least 24 hours before serving. For a different taste, add garlic, dill, oregano, or hot pepper sauce.
**This one is also tasty, and you can adapy for a different taste. **

And one more..
1 Quart Sliced Unpeeled Cucumbers* -- 1/4 inch thick 1/2 Cup Thinly Sliced Onions -- about 4 ounces 2 Garlic Clove Peeled And Quartered 1 1/2 Tbs Salt 2 Trays Ice Cubes** 3/4 Cup Granulated Sugar 3/4 Cup Distilled White Vinegar 2 1/4 Teaspoons Mixed Pickling Spices
*1 1/2 pounds, or 2 1/2 cucumbers, scrubbed, ends discarded. **Or 2 quarts crushed ice
Drain sliced cucumbers on rack. Combine cucumbers, onions, and garlic. Add salt; mix thoroughly. Cover with crushed ice or ice cubes. Set aside for 3 hours. Remove garlic cloves. Drain thoroughly in colander. Pour sugar, vinegar, and pickling spices into 3-quart saucepan. Bring to a boil. Add drained cucumber and onion spices. If you are making refrigerator pickles: - Heat 15 minutes. - Pour into hot, clean jars. - Set jars upright to cool. - Store in refrigerator (since the pickles have not been processed).
