Ginger and Lemongrass Cordial175 grams ginger, peeled and sliced finely 1 stalk lemongrass 1½ cups sugar 2 cups water 1 lemon, juiced This recipe is made to be mixed with water - I like to use sparkling mineral water to give it that fizzy lift without having to go the ginger beer route and deal with the sometimes explosive use of yeast. If the ginger is very young, you won't need to peel it - just slice it as finely as you can. With the lemongrass, chop off the woody tip - as it is hard, just chop it roughly into chunks. With the base, roughly smash it with a kitchen mallet or the handle of your knife - this loosens the fibres. Slice this into fine rings. Place a saucepan over a medium heat and add the sugar, water and lemon juice. Stir until the sugar just dissolves then add the sliced ginger and lemongrass. Let this slowly simmer for 15 - 20 minutes - you want the syrup to reduce and thicken and the lemongrass and ginger to release their flavours. When the time has elapsed, turn off the heat and let it sit until cold. Strain this into a bottle - discarding the ginger and lemongrass. You'll notice that your cordial has really taken on the colour of the ginger, giving it a pink-orange tone. My husband was inspired by this recipe. We always used to make our own lemon cordial until the corporate world took over our lives for awhile. We did make gingerbeer once as well. This seems like a good modern alternative.
Yesterday dh brought back two lemongrass plants from town which is 1 1/2 hours away. I may buy some lemongrass and ginger from the online fruit shop which is also in town next week to try.
Cordial I think is like mixed Koolaid.

Ds made the cordial today with a little help from dh cleaning out an oil bottle to put it in, and I think helping strain it.
I thought it tasted like some medicine, but can't remember which one. Everyone else loved it.

Maybe this recipe is better. Lemony Lemongrass IcecreamThis is by far the best icecream recipe we have tried without the use of an icecream machine. Very lemony and luciously smooth! It tastes the best same or next day. 4 Lemons 2 tbsp Lemongrass 200g Caster sugar 450ml Double cream* 1/2 tsp Salt Finely gate the peel of one of the lemons. Squeeze the juice of all 4 lemons and combine with sugar and lemongrass. Let it sit for at least 30-40 minutes so the lemongrass flavour is infused into the juice. Stir occasionally. Slowly add the crea and salt, mixing well as it will immediately thicken. Pour into a shallow container and freeze until sold around the outside and mushy in the middle. Stir with a fork and freeze until firm, or churn in an icecream machine. * The double cream makes this icecream deliciously silky smooth. if the amount of double cream concerns you, replace 1/3 double cream with single cream, but the icecream might be slightly icier. Sorry about your lemon grass Br. Will it return come spring? I never did find any plants for sale.
