Clove & almond shortbread
Preparation Time 40 minutes Cooking Time 15 minutes Makes 30 Ingredients * 100g (1 cup) almond meal * 250g unsalted butter, at room temperature * 45g (1/4 cup) icing sugar mixture1 * 1 tsp vanilla essence * 350g (2 1/3 cups) plain flour * 1 tsp ground cloves * 30 whole cloves, to decorate * 45g (1/4 cup) icing sugar mixture, extra, to dust Method 1. Preheat oven to 180°C. Spread the almond meal on a baking tray and toast in preheated oven for 7 minutes, stirring once during cooking, or until lightly browned. Transfer to a plate and set aside for 10 minutes to cool. 2. Meanwhile, use electric beaters to beat the butter, sugar and vanilla essence in a medium mixing bowl until pale and creamy. 3. Add the cooled almond meal to the butter mixture and use a wooden spoon to combine. Sift together the flour and ground cloves. Add to the butter mixture and use your hands to mix to a soft dough. 4. Roll level tablespoonfuls of the mixture into 12cm lengths. Bring the ends together to form a donut shape and press to join. Place on 2 baking trays about 3cm apart. Press a clove into the join of each biscuit to decorate. 5. Bake in preheated oven for 5 minutes, swapping trays around after 7 minutes, or until lightly browned. Remove biscuits from oven, dust with the icing sugar while still hot and cool on the trays. Notes & tips Note: Store in an airtight container for up to 2 weeks. In warmer weather, keep them in the fridge and bring back to room temperature before serving. www.comfycountrycreations.com/craftsforadults.htmFor making those wonderful smelling cinnamon/clove ornaments. I once made these for the Christmas tree and the whole house smelled wonderful. I don't see why you can't do them in non Christmas themes.

I made the cinnamon ones with the family 2 years ago, but didn't know about the cloves until recently.
