Make it today, enjoy it at Xmas: 1 kg Quinces peeled, cored and cut into small wedges 1 cup (200ml) of water or red wine, as preferred cook in pan until tender, cool off and put it in a blender until a fine puree is achieved 500 g sugar, 1 teaspon of lemon juice, mix with fruit puree and cook under constant heat, stirring with a wooden spoon until the mixture becomes sticky and comes off the sides of the pan. Cover the bottom of a baking-tray with parchment paper and spread out the mixture 5 mm thick, smooth with a spatula. Let dry in a warm spot - at room temperature - for a couple of days then cut into 1 inch by 1 inch squares or smaller, if preferrred, cover in sugar, shake off the excess sugar and store in a tin, airtight until christmas, separate layers with parchment paper. Enjoy - specially kids love it for the taste and the colour and it is all natural."
