Sweet and Sour Pickled PumpkinServes : Unspecified... ensure you have lots of jam jars! Degree of difficulty: Medium Preparation Time: 30 minutes Cooking Time: 3-4 days You need: - 2kg pumpkin - 1/2 litre water - 1/2 litre vinegar - 1.5 kg sugar - 1 piece of ginger - 1 stick of cinnamon - 1 lemon - An unspecified number of jam jars Method: Cut pumpkin into pieces. Combine water and vinegar and boil it. Pour it over the pumpkin pieces and let stand for at least 12 hours. Take the pieces out, add sugar, piece of ginger, stick of cinnamon, juice and rind of the lemon to the water/vinegar liquid. Boil the pumpkin pieces in this until slightly translucent. Put pieces into *****top glasses. Reduce the liquid a bit by boiling and then fill the glasses to the top with liquid. Close lids.
