Cumquat JamDegree of difficulty: Medium You need: 1 kilo cumquats 1.5 litres water 1.5 kilos sugar optional: 2 -3 tbs contreau Method: Cut fruit in quarters or eighths. Remove seeds and place in basin with water. Leave overnight. Combine fruit with water and cover. Place fruit in boiler, drain juice from seed basin (discard seeds) and add to fruit. (If you use whole fruit it is necessary to prick the fruit to stop from floating) Bring to the boil, reduce heat and simmer about 45 to 60 minutes until tender. Reserve mixture. Allow 1 cup sugar to one cup of mixture. Cook on high heat (without boiling!) When the sugar is dissolved boil 25 to 23 minutes. It's ready when it gels when tested in cold water.
