The squash and zucchini are coming in and I was wondering if anyone has had any success in freezing them. If so, please tell me the simpliest way to do it and how you used it later. I know some foods don't do well once they are frozen and I'm just not sure about squash and zucchini. Thanks.

I have frozen squah quite successfully. I grated my zuchini for use later in breads. My yellow crooked neck I sliced and put a piece of wax paper between them before I froze them so they could be fried later. I didnt' blanch either. They came out of the freezer perfect for use. Winter squash was baked, and the guts removed and stored in a container for use later.

Thanks Carolyn, I have 4 yellow squash plants and I don't eat the stuff, so we'll need to know this come harvest time. ;D

I have put up so much squash and zucchini now that I'm on the verge of being sick of even looking at it. I put up around 15 quarts of it in slices and now I'm putting up the zucchini that is already shredded and ready for making bread. I put up 6 quarts of that yesterday. I told Mel that everyone will be getting zucchini bread for Christmas - whether they like it or not! I figure that way I save money and get a head start on Christmas shopping. LOL
