So what is about ready for picking and freezing?
Nothing here in the north yet except strawberries. With us it's always a mad dash as everything ripens at once. LOL

Ellise, I have only ever heard of pickling watermelon rind, so tell me how to you 'put up' watermelon, cantaloupe, honeydew and grapes?

Grapes~ wash in cold water and let drip dry (completely dry) then bag them and pop them in the freezer. We sometimes eat them frozen too ;D When you thaw, do so in a bowl in cool water, I try to take them out of the baggie so they get completely covered.
Cantalope & other melons~ Peel from rind, cut into a bit larger than bite sized chunks, dry with paper towel to get majority of the moisture off, bag and freeze. I thaw just like my grapes, if you wait too long they will all become mushy.
I'd say they keep well for about 4 months. But who knows they never last that long around here ;D
