Sausage & egg ranch salad
Prep: 8 mins
Cooking: 18 mins
Serves 4
4 beef and cracked pepper gourmet sausages
Olive oil, to grease
4 eggs
300g Woolworths Ranch Salad (see ingredients below)
1 Preheat a frying pan over a medium-low heat. Add a little olive oil to lightly grease. Cook the sausages for about 10 minutes or until cooked through. Cover with foil to keep warm.
2 Meanwhile, fill a saucepan with cold water. Add the eggs. Bring to the boil over a medium-high heat and boil for 8 minutes. Drain into a colander. Lightly tap the base of each egg and set aside to cool.
3 Peel and roughly chop the eggs. Place the salad mix, dressing and the chopped egg in a large bowl. Toss to combine. Serve with the sausages.
Variation: Replace the beef sausages with 2 single chicken breast fillets. Cook the chicken breast in a large frying pan over a medium heat for 5 minutes each side or until cooked through. Slice the chicken and toss with the salad mix, dressing and chopped egg. To serve, scatter with purchased croutons.

Store oil in a cool, dry, dark place as light and heat can cause olive oil to lose its colour as well as flavour.

To keep the yolks centred in hard boiled eggs, stir the water constantly after you add the egg and until the water reaches the boil.
